The inside of this carrot cake had good intentions The inside of this carrot cake had good intentions: 🥕Made with almond flour, coconut sugar and no butter or dairy. 

But I felt I’d be doing the cake an injustice without a real cream cheese frosting so that’s what I made and I’m cool with that. 

Also I used natural food coloring and I was going for a pastel purple and got this ugly mauve but 🤷🏼‍♀️

This was totally on the fly and I based it off of pictures from the internet. I made a custard, folded in fresh whipped cream and piped it between thin layers of store bought puff-pastry. I haven’t even tasted them yet but I licked the spoon of the custard and it was bomb.

I feel like I’ve seen things that look like this before in bakeries but I don’t know what they’re called? Does anyone know? 

Crossing my fingers that these are approved of and somewhat similar to what he had in mind lol. Sometimes it’s fun to be creative like this and make something that even you don’t know what it is. 💕❤️🌹

They’re also easy to make and will impress your friends because how often do people say “I made homemade pretzels”? Not often. I mean, I impressed myself making these. 💁🏼‍♀️

Run don’t walk to the link in my bio and make these for the Super Bowl tomorrow. Serve them with mustard dipping sauce and then don’t @ me when you eat the whole plate yourself.
We were supposed to get 2 feet of snow last night We were supposed to get 2 feet of snow last night in Boston so I had this elaborate plan to make a cozy meal and watch the snow come down. 

I had the cozy meal covered but the snow turned to rain and then to sleet and then to ice, which honestly I’m not mad about. 

Also not mad about how this gluten-free chicken and dumplings turned out. I made it in my instant pot and it took a little over an hour to make. I’ve never had chicken and dumplings in my life so I couldn’t tell you what inspired this 🤷🏼‍♀️

I’m only 16% Italian so I won’t profess to kno I’m only 16% Italian so I won’t profess to know before yesterday that Chicken Milanese is actually just chicken parm with no cheese. 🐓

Whenever I go to Eataly I pick up these pre-packaged portions of Chicken Milanese and they are such a treat to have in my freezer. My boyfriend loves them, I love them, they’re great. However, going to Eataly is not convenient so when I bought thinly cut chicken breasts at the store the other day, I set out to try to make my own.

Cut to: me realizing I had no breadcrumbs. And to make Chicken Milanese, you need breadcrumbs. Otherwise you’re just eating plain chicken.

I remembered I had a pretty old looking loaf of sourdough bread in my fridge which ended up being the perfect amount to make breadcrumbs for my recipe. Also I felt like the sourdough bread was a healthier (and tastier) option to make breadcrumbs rather than plain old white bread.

This is a perfect comfort food meal that can be served as is, over greens, or with pasta. Last night I ate it with pasta with a spoonful of marinara and today I ate it on top of a salad which you can see in the pic. The pasta was better but I was too hungry to get a pic. You get it.

I'm sorry in advance. You guys, this stuff is addi I'm sorry in advance. You guys, this stuff is addicting. I need to immediately put it in jars and give it away because I have two freezer bags full of it in my fridge and justified it earlier as a "lunch dessert" and proceeded to snack on it like my life depended on it. 

HOWEVER, I won't really say sorry because if you know me at all, you'll know that this recipe is HEALTHIFIED. Not "healthy" per se but definitely healthier than your classic puppy chow/muddy buddy situation. 

This recipe is gluten free, almost dairy free (I added M&M's, sue me) and uses powdered monk fruit instead of sugar. You can feel free to tailor this recipe to whatever flavors you want, I happened to crave a sweet/salty mix so I added gluten-free pretzel pieces, peanuts and M&M's but you can add whatever your heart desires. 

Did you grow up with this stuff during the holidays? I tried it for the first time a few years ago and was in awe. Also if anyone in Boston wants a jar plz let me know ASAP because otherwise I'll eat it all.
