
I post a lot of semi-involved recipes (aka ones that take longer than 10 min) so this morning wanted to share something more simple…like what I eat for breakfast.
These oats have a secret serving of veggies in them as well as blueberries, banana, flax, collagen and hemp seeds. Really, this breakfast is the total package.
ingredients
- 1/4 cup oats
- 1/2 cup water
- 1/4 large zucchini, grated
- 1 banana, diced
- 1/4 cup frozen blueberries
- 1 tbsp flaxseed meal
- 1 tbsp hemp seeds
- 1 scoop collagen pepties
- 1 tbsp maple syrup
- 1/4 tsp vanilla extract
- dash of cinnamon
- dash of cardamom
instructions
- Add oats, water, and zucchini to a small saucepan and heat over medium heat
- Once the oats begin to cook and absorb water, add in the diced banana and frozen blueberries
- Stir to gently combine all ingredients
- Add in the flax, collagen, hemp seeds, vanilla, maple syrup and spices and stir gently
- Cook for another 2-3 min on low/med heat
- Serve! I topped mine with walnuts for an added boost of healthy fats
