
This salad screams summer. It pairs perfectly with a light fish or chicken dish and is sure to be a crowd pleaser.
INGREDIENTS
- 1 orange
- 1 tbsp fresh lime juice
- 1/2 tbsp apple cider vinegar
- 1 tbsp EVO
- Pinch of cayenne pepper
- Salt and pepper
- 1/3 small jicama thinly sliced and peeled
- 1 avocado
- Thinly sliced cucumbers
- Orange bell pepper
- Yellow tomatoes
- 1/4 cup crumbled feta cheese
- 1/4 cup cilantro
INSTRUCTIONS
- Combine all ingredients EXCEPT avocado and feta in a large bowl.
- Let stand in the fridge for at least 15-20 min.
- Before serving, fold in avocado and feta cheese.
