
These gluten-free, refined sugar free and dairy free cookies have become my old faithful recipe. I’ve tried switching them up countless times but always come back to this one, simple recipe. These cookies are a little crispy and brown on the outside and perfectly gooey on the inside. They’re definitely my favorite and my go-to when I need something sweet!
INGREDIENTS:
- 1 1/2 cups of Almond Flour
- 1/4 teaspoon Baking Powder
- 1/4 teaspoon sea salt
- 2 tablespoons coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/4 cup pure maple syrup
- 1 whole egg
- 1/2 cup chocolate chips
INSTRUCTIONS:
- Preheat your oven to 350 F.
- In a medium bowl, combine the almond flour, baking powder and salt and mix well.
- Once combined, add in the melted coconut oil, vanilla, maple syrup and egg
- Mix well.
- Gently fold in the chocolate chips.
- Using a tablespoon, drop the batter onto a baking sheet lined with parchment paper.
- Bake at 350 F for 13-15 minutes, or until golden around the edges.
- Allow the cookies to cool on the pan for 5 minutes, then transfer to a rack to cool completely.
