
Salty, sweet and full of flavor, these bars are perfect for breakfast or as an energizing afternoon snack!
INGREDIENTS:
- 1 cup rolled oats
- 1/4 cup unsalted pumpkin seeds
- 1.4 cup unsalted sunflower seeds
- 1/4 cup shredded coconut
- 1/4 cup goji berries
- 5 dates, roughly chopped
- 1/8 cup puffed buckwheat or puffed brown rice (can find in the cereal aisle)
- 2 tsp matcha powder
- 1/4 tsp sea salt
- 1/3 cup raw (preferably local) honey
- 3 tbsp coconut oil
- 1 tsp vanilla extract
- 4 generous tablespoons nut butter (peanut is my fave)
Instructions:
- Pre-heat the oven to 350
- Using a nonstick baking sheet, spread out the oats, seeds, and coconut
- Bake for 8-10 minutes or just until the oats and coconut start turning golden brown
- Transfer the oats, seeds and coconut to a large mixing bowl
- Add puffed buckwheat or rice, matcha powder, goji berries and salt
- In a pan over medium heat, melt the honey, coconut oil, vanilla extract and nut butter until thoroughly combined
- Pour the mixture in the bowl and stir everything together until evenly coated
- Press the mixture into an 8×8 dish lined with parchment paper
- Refrigerate for at least an hour, then cut into squares or bars
